Ingredients
- 2 C. long grain white rice, rinsed & drained
- 1 Tbsp Vegetable oil
- 1 C smoked mozzarella, shredded
- 1 C Colby, shredded or white cheddar
- 16 oz Frozen chopped spinach defrosted
- 1 bunch Italian parsley, finely chopped
- 1 bunch Cilantro finely chopped
- 3 garlic cloves, finely chopped
- 1 Med. sweet onion, diced
- ½ tsp garlic powder
- Salt & pepper,

Instructions
- Check out the white rice recipe and follow it through, however add the spinach prior to adding the rice.
- Once the rice is done add the chopped cilantro, Italian parsley and shredded cheese. Mix thoroughly and enjoy!
